Glea's Easy Holiday Yams


I'm not going to beat around the bush.  This Yam recipe is another holiday favorite of my family's and it is delicious because it is flavored with Brown Sugar, Orange Juice and of course, a little bit of Butter.  Again, holiday recipes are typically not the most healthy dishes you can fix BUT you usually only make them once or twice a year so you shouldn't feel too bad about making them.

My mother-in-law shared this recipe with me years ago when it became clear that we were not going to be able to travel home for the holidays and I ALWAYS think of her when I make them.  They are quick and easy - are you ready?  Here we go!

 Since it was just my husband and I this year, I cut the recipe down a little bit .

Take 6 - 8 Large Yams and throw them in to a large stock pot with some water to cover and salt for flavor.  Try to pick Sweet Potatoes that are similar in size so that they are done at the same time.  Cook them whole with the skins on until a fork or knife inserted into the thickest part goes in easily.

Take the pot off the burner, drain the water and let the Potatoes cool until you can touch them with your bare hands and gently pull all the skins off.  They should come off very easily.


Slice each Potato into 1/2 inch slices and layer in a large glass baking dish.  These Yams are very tender so they can fall apart a little bit when you are cutting them but don't let this discourage you.  Just dump it all in!


In a small saucepan melt your 2 Tablespoons of Butter.


Then mix in the 2 Tablespoons of Flour and cook for about 1 minute.  This will help thicken the delicious Orange and Brown Sugar sauce you are about to make!


Add the 1 Cup of Orange Juice and mix well.


Add your 1 Cup of Brown Sugar and keep stirring as it heats up.


Boil until thick - about 1 minute at a hard boil and then turn the heat off and let it sit for a minute or two so that it thickens.


This looks like a Caramel sauce, doesn't it?  It doesn't taste anything like Caramel but it is still delicious!


Pour this delicious mixture over your Yams and heat the whole dish in the oven at 350 for about 15 - 20 minutes.


 The last 3 minutes top with Mini Marshmallows and let brown lightly.


This will create a delicious crust on top.  You might consider this the slightly unhealthy part, other than the Brown Sugar, but you should still put a big heaping spoon full of this stuff on your plate because you are going to love it!

Glea's Holiday Yams
6 - 8 Large Yams (You can boil these a day ahead)
1 Cup Packed Brown Sugar
1 Cup Orange Juice (Not concentrate but the stuff you drink!)
2 Tablespoons Flour
2 Tablespoons Butter

Boil Yams in a large pot of water and let them cool before gently peeling the skin off.  It comes right off!  Slice into 1/2 slices and layer in 13 X 9 inch glass baking dish.  In a small saucepan melt the 2 T Butter and mix in the 2 T Flour and stir for one minute until it is well combined.  Add the 1 Cup of Orange Juice and then the 1 Cup of Packed Brown Sugar.  Let this mixture boil until thick which will take about a minute or two.  Pour over the Yams and cook in a 350 oven for about 15 - 20 minutes.  Top with Mini Marshmallows and let brown lightly.
