Creamy and Crunchy Chicken Salad - So, So Good!


As I type these words I can taste this Creamy and Crunchy Chicken Salad.  It is soooooo good and a hearty meal at any time of the day really and there is a little bit of everything in it.  Meat, vegetables, fruit, dairy, nuts and some delicious seasonings.  Give this salad a try and put it in your recipe box!  Here is what you do:


Chop up 2 or 3 green onions into a small dice and throw it into a bowl.


Cut 1 1/2 cups of red grapes in half


and throw them into the bowl with the green onions.


One of the tricks to make sure that your Chicken Salad is easy to eat is to make sure that you chop everything to a fairly uniform size.


Since celery is kind of an odd shape at one end of the stalk, cut slits all the way down each stalk to make sure they are all the same size.  Then chop the celery and add that to your bowl of ingredients.


You can use any type of Almonds you want but I wouldn't use whole Almonds because they are just so bag and hard to chew.  If you have whole Almonds you can just chop them up a little.


I had a small bag of Slivered Almonds and it was 1/2 cup size so I just threw that into the bowl with my other ingredients.  This looks good enough to each just like that but let's finish the recipe!


In a large bowl add 4 cups of cooked chicken that you have shredded.  You can use leftover chicken if you have it or poach some chicken in water or chicken stock or a combination of both. Mix this all together and set the bowl aside.

In a medium bowl add:


1 cup of mayonnaise


and 1/4 cup of sour cream.  I know, you can't tell that there are two different ingredients in the bowl but there are.


Here is where you are supposed to add 1 1/2 teaspoons of Dill Weed but I didn't have any in my kitchen today so I am going without.  If you have Dill Weed, make sure you put it in because it really gives the salad a great bump in flavor.  Also add Salt and Pepper to taste.


Pour this delicious mixture of creaminess over the bowl that contains the Chicken, Grapes, Celery, Almonds and Onions and mix until well combined.


Oh my, here it is and I just tasted it - heaven in a bowl.  Glorious!  This can be served on a roll or on a bed of lettuce. Give this creamy, crunchy and oh so filling recipe a try.  I'm sure it will become one of your favorites too.

Creamy and Crunchy Chicken Salad
4 cups of poached Chicken Breasts, shredded
2 - 3 Green Onions, chopped
1 1/2 cups of Red Grapes, halved
1 1/2 cups of Celery, chopped
1/4 cup Slivered Almonds
1 cup of Mayonnaise
1/4 cup Soup Cream
1 1/2 teaspoons of Dill
Your choice of rolls or lettuce
