Italian Orzo


Here I am with another light and flavorful salad for your summer time meal planning.  Italian Orzo is a delicious salad that is extremely refreshing and darn it, it just tastes healthy!  And it is even more wonderful because you probably already have most of these ingredients in your kitchen. You will enjoy this salad Winter, Spring, Summer or Fall but it will be most appreciated on a hot summer day or evening.  This is what you will need:


Here are the quick and simple directions for your new favorite salad:

Cook 2 Cups of dry Orzo to package instructions.


While the Orzo is cooking, chop up your 2 Green Onions and dump them into a large serving or mixing bowl. I don't like to dirty a lot of dishes so I just grab one of my pretty serving bowls and do all the work in that bowl.


Then chop up your 1/2 Cup of Feta Cheese.  If you really like Feta, you can use more but Feta is a pretty strong cheese and has a lot of salt in it so if you aren't sure, stick with the 1/2 Cup and add more to your taste.


Now you will chop your 1 cup of uncooked spinach into small pieces and dump that into the bowl.


Chop up your 2 medium sized tomatoes (any kind you like) and pop those into the bowl.  Your almost ready to mix it all up!

I apologize for the fuzziness of this photo.  It is hard to take a picture of moving oil.  As you can see, it didn't work out very well.

Pour your 3 Tablespoons of Olive Oil on top of everything and begin to lightly stir.


When the Orzo is done cooking, drain it and run cold water over it to cool it quickly and pour on top of all your other ingredients that you have already added to the serving bowl.  You will see your tomotoes

Then add some pepper.  Again, you don't really need to add any salt but if you really love the stuff, go right ahead!


Oh man!  Does this not look delicious to you?  At this very moment, it is down in my refrigerator chilling waiting for my family to get home so that I can eat it!  It will also be so very good for lunch tomorrow at work.

Italian Orzo
2 Cups uncooked Orzo
2 Green Onions, chopped
1/2 Cup Feta Cheese, chopped
2 Medium Tomatoes (any kind you like)
1 Cup Fresh Spinach, chopped
3 Tablespoons Olive Oil
Salt and Pepper to taste

While your 2 Cups of Orzo are cooking to package instructions chop up all your other ingredients and throw them into a serving bowl.  When the Orzo is done cooking, drain it and run cold water over it for a minute or so to chill it and then dump the Orzo onto the chopped ingredients in the serving bowl.  Drizzle the 3 Tablespoons of Olive Oil over the bowl and season with Salt and Pepper to taste.  Gently stir it all together and it is ready to serve.  Serve at room temperature or chilled.  I promise, everyone will love it!
