Freezer Meals - Chicken Cacciatore


Chicken Cacciatore is a recipe that you usually have most of the ingredients for in your freezer and pantry so it is a great go-to meal for a busy family. Chicken can be really pricey sometimes, especially chicken breasts, so when I am shopping for meats I try to get them at a discounted rate by shopping at my local stores when they have their steep discount days. This saves me quite a bit and really cuts down on the food bill and stretches my dollars.  

Take two 1 gallon freezer bags and write the date you are making them, the name of the dish and the directions for thawing and cooking on the front of each bag.

SPLIT THESE INGREDIENTS BETWEEN TWO BAGS!
4 Boneless Skinless Chicken Breasts
1 Large Package Button or Mushrooms (sliced)
2 6 oz. Cans Tomato Paste
2 T Italian Seasoning
4 Cloves Minced Garlic
2 Cups Chicken Broth

Start by adding the chicken broth, tomato paste, garlic and Italian seasoning to the bag and seal it up.  Squish it all together until everything is well combined.  Open up the bag and add the chicken and button mushrooms.  Squeeze all the air out and seal up the bag and mix it all together gently until everything is coated and mixed.

Can you believe you are done and how quick and easy that was?  You now have two meals ready to go and it took very little time to prepare and store.  This meal is delicious and so good over rice or pasta.  For busy moms on the go, this freezer meal is a great idea!


Chicken Cacciatore
4 Boneless Skinless Chicken Breasts
1 Large Package Button Mushrooms (sliced)
2 6 oz. Cans Tomato Paste
2 T Italian Seasoning
4 Cloves Minced Garlic
2 Cups Chicken Broth

Take two 1 gallon freezer bags and divide the above ingredients between the bags.  Seal the bags and mix the ingredients until well combined.  Lay the bags flat in the freezer.

Directions for Thawing and Cooking
Thaw overnight in refrigerator or if in a hurry, run under hot water until all ingredients slide out of bag.  Add in 1 cup of chicken broth or water and cook on low in crock pot for 6 to 7 hours.  Serve with pasta and fresh parmesan cheese.
