Two Dish Chicken and Rice - So Good!



Chicken and rice.  Staples in most household kitchens in America but boy does that sound boring.  Several years ago when I was watching an afternoon cooking show I saw this wonderful recipe for a chicken and rice dish that looked delicious and oh so easy to make.  I had 4 kids at home so easy was important and I have been making it ever since.  Here is what you need to do to make this yummy chicken and rice dish with very little effort and it is not boring at all!


In a medium sized bowl add 1 1/2 cups of Uncle Ben's Long Grain White Rice, uncooked.  You can use regular rice for this dish but I prefer Uncle Ben's rice because it cooks up so much more plump and doesn't split.  It does seem to take a little longer to cook than regular rice but it is worth it!







Then add 1 can of Campbell's Cream of Chicken Soup, undiluted







and 1 can of Campbell's Cream of Mushroom Soup, undiluted.

This looks completely disgusting but I promise, it is good!

Add 1/4 teaspoon celery salt and 1 1/2 cups of milk.  Please use whole milk as 1% and 2% just don't make as creamy of a sauce and it just tastes better - I promise!  Mix these ingredients well and set aside for just a few minutes.


Spray a 9X13 baking dish Pam cooking spray.


Pour the rice mixture into the greased baking dish.


Lay 8 raw boneless-skinless chicken breast halves on top of the rice mixture.  My pieces of chicken were pretty large and thick so I only used about 5 along with some smaller pieces and that was plenty for my family.


Now you may not have heard of this type of soup but there really is a Campbell's Cream of Chicken and Mushroom soup so look for it!  If you just put in another can of Cream of Mushroom Soup, you will be sad because it just won't taste the same.  There is a little extra something in this soup that isn't in the regular Cream of Chicken and Cream of Mushroom soup.


In a small bowl pour the envelope of Lipton Dry Onion Soup Mix


another 1 1/4 cups of milk


dump in the 1 can of Cream of Chicken and Mushroom soup and stir all until well combined.


Pour on top of the chicken and rice.

Cover the dish with foil and bake in a 300 degree oven for 3 hours or until the rice and chicken are tender. You can also make this in a crock pot which is ideal for Sundays!  This meal serves 8 people.

The only other thing you will need is a nice side of rolls or french bread and a salad and you are set!  Give this recipe a try and let me know what you think.

1 can Campbell's Cream of Chicken Soup, undiluted
1 can Campbell's Cream of Mushroom Soup, undiluted
1/4 t Celery Salt
1 1/2 Cups Whole Milk (Please use Whole Milk!)
8 raw Boneless-Skinless Chicken Breast Halves
1 can Campbell's Cream of Chicken and Mushroom Soup, undiluted
1 1/4 Cups Whole Milk (Again, you MUST use Whole Milk!)
1 Package Lipton Dry Onion Soup Mix

Spray a 9X13 baking dish Pam cooking spray and pour the rice mixture into the dish.  Lay 8 raw boneless-skinless chicken breast halves on top of the rice mixture.  In the same bowl you mixed up the rice mixture pour 1 can of Campbell's Cream of Chicken and Mushroom Soup, another 1 1/4 cups of milk and 1 package Lipton dry onion soup mix and stir until completely combined.  Pour on top of the chicken and rice.

Cover the dish with foil and back in a 300 degree oven for 3 hours or until the rice and chicken are tender. You can also make this in a crock pot which is ideal for Sundays!

Serves 8.
