Now this will sound crazy because it is August but I made this delicious dish today and I didn't even care that it raised the temperature of my house about 15 degrees - I love this recipe that much! For those days when you just don't feel like slaving over the stove but really want something substantial that will stick to your ribs, this dish is just what you are looking for. All you have to do is dump the ingredients into a baking dish, cover it with foil and then pop it into the oven and you are done.
I found this recipe at Kraft Recipes so if you haven't stumbled across this great website yet, give it a glance. I adjust the recipe depending on the ingredients I have on hand but I usually try to stay pretty close to the original. For instance, today I used 3 large boneless/skinless chicken breasts instead of bone in chicken because I had it on hand. One-Pan Chicken and Potato Bake is a favorite at our house because it taste's so great AND because it isn't a time consuming recipe. Here is what you need to do:
Preheat your oven to 400 degrees. Spray a 13 X 9 baking dish with Pam Cooking Spray and lay 4 large Chicken Breasts on the bottom of the pan.
Take 2 large Baking Potatoes and cut them into wedges. Here I made an adjustment and used about 7 small Potatoes because I didn't have large ones.
I then just lay them on top of the Chicken Breasts.
Pour 1/4 Cup of Kraft Zesty Italian Salad Dressing over the Chicken and Potatoes.
Now here of course you are noticing that I used fresh Parmesan instead of the type listed in the recipe. I used fresh Parmesan Cheese because I didn't have any of the canned stuff. I had a small chunk of Fresh Parmesan left over from a recipe from a few weeks ago and there was just enough for this recipe. Either way, sprinkle 1/4 Cup of Kraft Parmesan Cheese over the Chicken and Potatoes.
Sprinkle 1 teaspoon of Italian Seasoning over everything.
Oh my! This looks so good even though we know there is raw Chicken under those Potatoes!
Look at how the Italian Dressing and Italian Seasoning sticks to the Potatoes and can't you just see how the cheese is going to melt all over everything? Aaaaahhhhhh!
Ok. I'm done looking now and I understand that this needs to do some serious cooking before I can eat it!
Cover your baking dish with foil and bake at 400 degrees for 1 hour or until the Chicken and Potatoes are done (preferably 165 degrees), uncovering after 30 minutes.
Yes, this does look good but let's get a little closer!
Look at how the Cheese has melted and bits and pieces are crispy and crusted onto the Potatoes. I know you can't tell me that this doesn't make you hungry!

4 Large Chicken Breasts
1 1/2 lbs. Russet Potatoes, cut into thin wedges
1/4 C Kraft Zesty Italian Dressing
1/4 C Kraft Grated Parmesan Cheese
1 t Italian Seasoning

Pour 1/4 Cup of Kraft Zesty Italian Salad Dressing over the Chicken and Potatoes, sprinkle 1/4 Cup of Kraft Parmesan Cheese over the Chicken and Potatoes as well as sprinkle 1 t of Italian Seasoning over everything. Cover with foil and bake for 1 hour or until the Chicken and Potatoes are done (preferably 165 degrees), uncovering after 30 minutes.
