It is almost fall here in Pennsylvania and admittedly it is my favorite time of the year. I love the cool of the days and nights, that fresh smell in the air, the beautiful changing of the leaves and even more importantly, the yummy food you are once again permitted to eat!
But just because it is almost time for the seasons to change again and we are beginning to feel that need to hunt and gather doesn't mean that everything we store and prepare for our families has to be fattening, from a box or full of sugar. No, I am going to take you back again to another delicious Crock Pot meal - Chicken Fajitas that is not only satisfying and full of healthy ingredients but also simple to throw together. You know how I love that!
Grab your tried and true, battered and sometimes blue or maybe even your new Crock Pot and dump the following in:
Core and slice up 3 Peppers, your choice of color (green, red, yellow or orange)
and layer them on the bottom of your crock.
A closer look because they are so beautiful!
Slice one medium sized Onion
and lay the 3 large Boneless Skinless Chicken Breasts on top of the Peppers. Then throw the sliced Onion on top of the Chicken Breasts.
Pour 1/2 Cup of Low Sodium Chicken Broth over everything you have added so far
Sprinkle 1 package of Taco Seasoning (any flavor or heat you like!) and 1 teaspoon Chili Powder over everything you have in the Crock so far.
Then throw on 1/2 teaspoon Paprika.
and sprinkle on 1/2 teaspoon Kosher Salt.
Pop the lid on top of the Crock
and set it to cook for 6 - 8 hours on low or for 3 - 4 hours on high.
After two hours, this is what the chicken and veggies look like. Yummy!
As this cooks down it will create it's own delicious sauce that just makes the meat so tender and juicy and perfect for rolling up into soft Flour Tortillas (my favorite!) or Corn Tortillas. So this is what it looks like after 4 hours. It's almost ready!!!!
Before you can eat this delicious dish you will need to shred up the chicken and you can do this right in the crock so that it can be mixed with all the vegetables and the juices that it has all cooked in.
So good! I just took a bite and this stuff just melts in your mouth. It was so very easy to throw together and cooked to perfection after spending about 4 1/2 hours in the Crock Pot on high. How long has it been since I said that I LOVE cooking in my Crock Pot? If it's been a while, I want to reaffirm my love for this one appliance. I couldn't live without it!
About 1/2 hour before you think you are going to eat you can:
Shred up some delicious cheese of your choice. I love Cheddar but you can use any kind you like. I suppose that a Pepper Jack Cheese with Fajitas would be delicious!
Serve up a delicious bowl of Sour Cream.
Mix up a mouth watering dish of Guacamole.
Slice some tomatoes.
You can top this glorious Fajita with Salsa if you like but it's not necessary. There is so much flavor that it really is heavenly all on it's own!

Chicken Fajitas - Made in a Crock Pot?
3 Peppers of your choice (Green, Red, Yellow or Orange)
3 large Boneless Skinless Chicken Breasts
1 large sliced Onion
1/2 Cup of Low Sodium Chicken Broth
1 package Taco Seasoning (any flavor or heat you like!)
1 teaspoon Chili Powder
1/2 teaspoon Paprika
1/2 teaspoon Salt
Flour or Corn Tortillas - warmed
Toppings:
Shredded Cheese
Sour Cream
Guacamole
Diced Tomatoes
Salsa
