Lemon Crinkles



Have you ever had a spur of the moment thought to take a homemade treat to a neighbor or friend and then you realized you didn't have anything that you would feel good about giving?  Well, I have a great cookie recipe that you are going to love that only has 4 ingredients, it cooks in just a few minutes and it costs only about $1.50 to make this batch of cookies.  Score!  This cookie recipe is flavorful with a lightly crispy crust and a soft and tender inside?

Lemon Crinkles.  Isn't that a great name?  They are called Lemon Crinkles because of course, they are lemon flavored AND when you cook them in the oven as they spread out, they form these great crevices and cracks.  I love them!

Here is what you need to do:


Preheat your oven to 375 degrees.  These ingredients don't look like much but I promise you, these cookies are heavenly!



In a large bowl dump the whole box of your dry Lemon Cake mix.  That's right, you don't mix anything just dump the powder into the bowl.


Now you are going to add the 2 whole Eggs to the bowl.



Then add the 1/3 Cup of Canola Oil and mix everything together until well incorporated.  This will create a soft dough for you to work with.

Put 1/4 Cup of Powdered Sugar into a small bowl and set it aside for the last step.


Now grab your small scoop.  There are a few sizes of cookie scoops so make sure you use the right one.  I use the scoop that is smaller.



Scoop up some of the dough and level it out a little.  It doesn't need to be perfect but you don't want the balls you form to be too big and you want them all to be the same size.  Form the balls by rolling the dough from your scoop in your hands gently.


Now put your ball into your confectioners sugar.


Roll it around until it is well covered.
 

Place the balls on a cookie sheet and sprinkle each one with a little more confectioners sugar and bake for about 10 minutes.  They are done when they are start to get lightly golden brown around the edges.


Look at those crinkles!  These are delicious cookies that are so easy to throw together and are ready in just a matter of minutes.  Give these a try and pass the recipe on to the next person you know who is in need of a great cookie recipe.  Everyone loves them.

1 box Lemon Cake mix
2 whole Eggs
1/3 Cup Canola Oil
1/4 Cup Powdered Sugar

Form balls by using a cookie scoop and roll between your hands gently and then roll each ball in the Powdered Sugar.  Put the balls on a cookie sheet and bake for about 10 minutes.
